My kids love cheese cake and when I attempted to make my first one it was exciting to note how easy it was to make with just 4 ingredients. My ambitiously lazy self always looks for ways to make easy, low-calorie desserts without compromising the flavors. This weekend I am making some more cheesecake for a friend’s birthday and am going to add some pumpkin for fiber and color 🙂
Cheese cake reminds me of a dessert which Goan’s make called Posu. It is made with cows Colostrum, it is the first milk the cow gives after it has given birth. To that sugar, nutmeg and a hint of turmeric is added and then steamed for 15 -20 minutes to form a thick pudding. Chilled and enjoyed. I love this sweet. It is a rare treat in Goa as colostrum is not sold in stores. You need to know a generous farmer who would share it. We were lucky enough growing up to know one. Three generations of farmers had delivered fresh milk to my family. By the time we were in college the milk-man (dudkar) had stopped coming. Last time I visited Goa my Madrinha(God-Mother) had made some and I enjoyed every bit of it.
Serving Size: 9″ Round
Ingredients:
2 packs of 1/3 fat cream cheese
1/2-3/4 cup organic sugar
1 tsp of vanilla
2 room temperature eggs
Sour Cream Topping (optional)
1.5 cup sour cream
1/4-1/2 cup sugar
1/2 tsp of vanilla
Directions:
Heat oven to 350F
Cream the eggs and sugar first. Next add the cream cheese and vanilla.
Pour in a 9″ round greased pie dish. Bake for 30 minutes till you see a golden brown edging and the toothpick comes out clear.
Cool and chill in the refrigerator for 1-2hrs.
If topping with sour cream whisk the 3 ingredient well. Spread the mixture on a cooled cheese cake and then chill for 2-3 hours before serving.
Enjoy as a light dessert. Great for parties as you can make it a day early.

I admit to feeling a little uncertain about eating anything made from colostrum – but I bet it is very nice, nevertheless. Cheesecake is great and this one looks gorgeous!

Your cheesecake looks tasty. I think I would feel quite guilty eating the dessert made from the cow’s colostrum because there would be a calf somewhere not getting the immunity it needs from that first milk.

I love the idea that you can make this in a pie pan. How did it turn out with the pumpkin? I love pumpkin cheesecake.

It turned out great Mary. My friends said they enjoyed it. I just added about 1/2 cup. It was subtle since cream cheese is a bit overpowering. Next time I want to try it with 1 cup. I think I may have to add an extra egg for it to be firm.

That Cheese Cake looks yum! 🙂 We too make a sweet from Colostrum called Kharwas and has almost the same ingredients as you have mentioned! And it is becoming a rarity these days!

This reminds me so much of cake that is made in the neighbouring region of Cantabria, famous for it’s dairy cows & products. It’s called a quesada but actually is made with very fresh milk, eggs, sugar, butter, cinnamon & lemon zest.

Your presentation of this NO CRUST BAKED CHEESECAKE made My day. It looks very SPLENDID and absolutely PALATABLE. I could not resist looking at the photo over and over again. If I may say this, You are getting better at Your photography with every passing week. You mentioned COLOSTRUM, I know exactly what colostrum is. My late mum’s (DUDKAR) Seby, used to get Her colostrum every year. And I recall My late grandma used to add some spices to it and boil it and then serve it to Us. Now don’t ask Me what spices She used. I really don’t have a clue. I am not being funny, but I did not like the taste of it but My mum,dad, grandma,sister’s and brother loved it very much and tucked it in with GUSTO. It is so many years ago, I can’t really remember very well. I think it was yellowish in colour, correct Me if I am wrong. Again this Colostrum thing brings about some very HAPPY MEMORIES. Now to the CHEESECAKE, My spouse likes Her pastry and sweets, She could live on them. She goes to the supermarket and always returns with a variety of cakes. And then helps Herself to big portions of pastry. I keep reminding Her by saying things like ‘that cheesecake or that bebinca will not do YOUR FIGURE ANY GOOD’. The objective of the exercise is to discourage Her from consuming generous portions of pastry. I thing eating these sweets in moderation is fine, but its when people it in excess, that it turns into a health and safety issue. She tries to serve big portions to Me too. But to that I say to Her, ‘Linda, I got to watch what I eat’. I have already emailed Your recipe to the missus and to Malcolm in West London. I bet I will have No crust baked cheesecake for SUNDAY BRUNCH. Will let You know, when We put it to the test. It goes without saying the cheesecake will turn out SUPERB.
