Mullo Bhaji – White Daikon Radish with Grated Coconut Recipe

Last weekend my husband came home with mullo -diakon radish and said he wanted to eat some goan mullo/ mulliah bhaji. Mullo – diakon radish is very common in Goa and is eaten as an everyday vegetable. It does not need too many ingredients to make this vegetable shine.  We ate it just boiled and as bhaji. It’s very tasty with just 4-5 simple ingredients. You can also cook it with caldin curry and it taste great. I also use the caldin curry recipe to make bottle gourd (opo squash or long melon).

Serving Size: 4-6

Ingredients:

4-5 average sized diakon radish with green leaves

1/2-3/4 cup of fresh grated coconut

1 medium onion diced

3/4 cup water

1 diced tomato (optional) gives color and flavor

1 green chilli for spice (optional)

salt to taste

Directions:

Wash the radish well to take off any sand or mud. Cut it into 1/2 inch pieces.

In a pot add the coconut, onion, tomato and the radish on top. Add in the water and cover and cook on medium heat for 20-30 minutes till the radish has soften.

Season with salt and enjoy it as a side with rice.

Goan Meatloaf Recipe

Goan meatloaf  tastes just like the canned corn beef. I started to search for the recipe after my youngest son kept asking me for ham sandwiches for school lunch. I was trying to avoid buying ham till I caved in. But it reminded me of my mama’s meatloaf and I started to search for the recipe. I have only one goan cook book that my brother had given me when I got married. It has been well used and in tatters but the recipe was not there. I asked my mother and she could not remember the recipe, said she would call her friend who had initially gave it to her.  My only google search had me confused as the recipes listed as goan were nothing close to the actual recipe. But I truly give kudos to the human brain and God’s creation. As a computer engineer myself there is no supercomputer that can still replicate the sense of taste and the retrieval of historic data from our brains as fast as the human mind does.

My mother is my only surviving parent and I want to get as much knowledge as possible from her. She will be 80 on March 15th. My mama was one of the few working mom’s in the early 1960’s. She was the principal of a public elementary school. She was very dedicated to her cause of education and work. She was educated in the Portuguese language but taught at an English medium school. I remember she spent her summers mastering the English language by taking classes. She was strict, organized and methodical and had high expectations for us 3 kids.

Serving Size: 6-8

Ingredients:

1 lbs ground beef

1/4 lbs of ground pork with some fat

1 tbsp + 1 tsp of pink curing salt

1/2 tsp of coarse black pepper

1/2 tsp of nutmeg powder

2 white bread slices quickly soaked in water and set aside

1 whole egg

Directions:

Heat oven to 350F.

Squeeze the extra liquid out from the soaked bread slices and mix it along with the rest of the ingredients thoroughly with clean hand.

Spray bread pan with some oil and pack the meat mixtures into the pan nice and evenly.

Bake for approx 1.15 hrs till internal temperature is approx 160F.

Drain all the liquid and fat.

Cover and chill in the refrigerator overnight or enjoy it warm out of the oven.

Use leftovers to make meatloaf sandwiches. Blend softened butter and meatloaf to a smooth paste and use it to make Hors d’oeuvre.

Pressure Cooker: Pressure cook for 45 minutes cover the container with aluminium foil.

Fruit Cake with Brandy Soaked Candied Dry Fruits

Since I am still enjoying my low sugar fruit cake for my evening teas, I think it would be ok to share this recipe past Christmas. I always enjoyed the fruit cakes in Goa till I came to the US and found the cakes way too sugary. I have always wanted to make it but felt it was a tough recipe till I made mine and found out that it just took time. Sharing my fruit cake recipe which has a surprising twist that includes a touch of heavy cream. I know call me crazy 🙂 I got the idea after enjoying many red velvet cakes made by Fresh and Easy. It had a lingering taste of creaminess from the dry milk powder and heavy cream used in the cake. My first attempt using dry milk powder in a cake did not turn out well. I decided to use heavy cream to the fruit cake since it is an intense cake with lots of sugar. You can make it alcoholic by adding brandy after the cake is baked read the foot note. I have added brandy while soaking raisins and candied dry fruits for 3 weeks.

Serving Size: 7 x 11 baking pan

Ingredients:

To make mincemeat or dry fruit mix 3 weeks in advance

2.5 cups of tutti-fruiti / mincemeat

1/2 cup of candied orange rinds

1 cup of whole raisins

3/4 cup of brandy

Mix all the ingredients and keep in an airtight container for 2 to 3 weeks. Stir with a dry spoon every couple of days.

Cake Batter:

2 cups of flour

5 tbsp of heavy cream( optional)

1/2-3/4 cup of sugar

6 eggs

1/2 tsp of cinnamon powder

1/2 tsp of nutmeg powder

1/8 tsp of clove powder

1/4 cup oil / melted butter

1/2 cup of silvered almonds

1 bag 17oz of halves walnuts

1/2 tsp of baking powder / soda

3 pinches of salt

Directions:

Heat oven to 320F

Beat the egg, sugar, heavy cream, spice mix and salt mixture together. Next add the mincemeat.

After’s slowly add the flour and baking powder to the wet mix.

Spray you baking pan with some oil and pour in the cake batter.

Bake in the middle rack for 1.45 to 2 hrs. Check in between.

Let cool.

Bolo de Bolacha Marie – Marie Biscuit Cake Recipe

Bolo de bolacha marie is a dense cake which is not baked. It can be prepared a couple of days ahead. My dad loved his bolacha marie and cream crackers biscuits. We always had it at our home. My titi (my mom’s older sister) would make this cake for my sister’s birthday quite often when we were small kids. Once I started to cook I used to make it for Christmas, Easter and birthday parties. In fact it was the first dessert  I made for my husband on his first trip back home from the US before we got married 🙂 This dessert holds a lot of good old memories for me. I haven’t made it for a very long time.

The origin of this recipe is definitely portuguese and has some likeness to Italian tiramisu. Unlike tiramisu you cannot over eat this cake because of high fat and caffeine. If you do, it makes you feel uncomfortable. I have made a few tweaks in the recipe to make the frosting light and skipped the raw egg for whipped cream. I have also used graham crackers instead of Marie biscuits as it is readily available in the groceries store. The only challenge is that graham crackers tend to fall apart even after a quick dip in black coffee compared to the marie biscuits.

Serving Size: 3-4

Dish Size: 6x4x2.5 deep glass dish

Ingredients:

1.5 pack of graham crackers

1 cup of unsalted room temperature butter

1/2 cup heavy whipping cream or 1 egg

1/3-1/2 cup sugar

1 tbsp of vanilla essence

1 cup lukewarm water

1 tbsp of instant caffeinated or non coffee powder

1/8 tsp of salt

Directions:

Make the frosting first  by adding the butter, sugar,salt,vanilla and heavy cream. Whip for about 7-10 minute till light and fluffy.

Next make the black coffee by mixing instant coffee with 1 cup water put in a shallow dish so it will be easier to dip the cracker in.

Take you glass dish and first start by dipping the cracker in the coffee and layering the dish to cover it.

Next add a layer of frosting alternate between the crackers and frosting till all the frosting is done.

Decorate with crushed nut or sprinkle the top with some cocoa powder.

Let refrigerate for 3-4 hours before enjoying a slice.

Note: You can add cocoa powder to make chocolate frosting

Upma Recipe – Indian savory breakfast made with Cream of Wheat

Upma is a very popular south Indian breakfast food. In Goa it is available at the chaia dukan (Tea Stalls) till lunch time, locals call it Uppit. Upma recipes have changed so much that it is now  consumed for lunch or dinner. The newer recipes have toasted nuts and dal, veggies and additional spices. The flavor and aroma are from curry leaves and mustard seeds. My recipe is of the past old days when life and foods were simple and not complicated.

Serving Size: 3-4

Ingredients:

2 tbsp of ghee or oil

1 cup cream of wheat/ rava/ semolina

2.5 cups water

1 medium onion chopped finely

15-20 curry leaves

1 green chilli

1/2 tsp of black brown mustard seeds

2 pinches of asafoetida

1/2 tsp of sugar

1/2 tsp of  salt

Directions:

Heat a non-stick pan and roast the cream of wheat on medium heat by stirring continuously for 5-7 minutes till it has a nice light golden color and a nutty smell.

Take of heat. Heat oil or ghee in a pot. Add the mustard seeds, chilli and curry leaves, saute for 20-35 seconds. Add the onions and saute till light brown. You can add peas and carrots if you like and saute for 1-2 minutes. On the side boil 2.5 cup water add the sugar and salt.

Once onions are soft add the boiling water and slowly add the roasted cream of wheat by stirring continuously till no lumps are formed. check for seasoning.

Cook for about 2-3 minutes till thicken. Turn off the heat and let stand for 5 minutes. You can now mould the upma or serve as is. Enjoy it hot.

Indo-Chinese Hot and Sour Soup Recipe

The Indian hot and sour soup is one of my husband’s favorite and now it’s my 9-year-old’s as well. I grew up with Indo-Chinese cuisine outside of goan and indian as it was the only other cuisine.  Now a days you can find all sorts of different cuisine in Goa. A Indo-Chinese restaurant called “Gaylin” was the most popular one in Margao.  You can also check out my other Indo-Chinese recipe  Chicken Manchurian.

This recipe is fairly easy and can be done a vegetarian or non-veg version. In the vegetarian version you can add cabbage, green beans, mushroom, carrots, bamboo shoots and tofu and for a non-veg shredded chicken. Else you can leave it as a thick broth without any additions. Last week I  used the same recipe to make chicken wonton soup.

Serving Size: 4-6

Ingredients:

6 cups of water or stock

1/2 onion finely chopped

5-7 finely chopped garlic cloves

1″ ginger chopped fine

3 tbsp of corn starch

1.5 tbsp of vinegar

4-5 tbsp of soya sauce

1 tbsp of chili-garlic paste

1/2-1 green chili chopped

salt to taste

Optional

1/2 cup finely chopped cabbage

1/2 cup finely chopped green beans

1/4 cup finely cubed carrots

1/2 cup cubed tofu

1/4 cup bamboo shoot

1/2 cup mushrooms

12-16 wonton

1 egg beaten

1/2 cup shredded chicken

Directions:

In a pot saute the onion and green chili till soften. Next add the ginger, garlic and saute for 30-40 seconds. Next add the vegetables and sweat them for 4-5 minutes.

To this add water or stock, chili-garlic paste, soya sauce, vinegar and salt to season and cook covered for 15 minutes on medium heat. You can add the wonton or tofu or shredded chicken bring to a boil.

Mix the cornstarch with 3-4 tbsp of water to form a paste. Add this mixture to the hot soup and stir till it thickens and starts to bubble. Finally add the beaten egg and stir the soup slowly to get egg stands.

Take of heat and serve hot. You can add fresh chopped cilantro for garnish.

Methi Bhaji – Fenugreek Leaves and Urad Dal Recipe

Fenugreek leaves is popular in a Goan household. It is usually made into a vegetable while in the rest parts of India methi leaves is used in many ways. It has many health benefits  which makes it very popular. I had never cooked with methi leaves before so this was my first time. Just fyi, I have to be in a zen state before I get cooking with first time ingredients so as not to mess up the recipe 😉

Serving Size: 4-6

Ingredients:

leaves of 2 bunches of methi

1 small onion chopped finely

1 cup of moong or urad dal soaked for 30 minutes in water

1/4 tsp of Asafoetida (hing)

1/2″ finely chopped ginger

3 finely chopped garlic cloves

1 slit green chili

1/2 tsp turmeric powder

1 tsp coriander powder

1 tsp sugar

1 tsp lemon/lime juice

salt to taste

Directions:

Heat a pan add oil. Once the oil is hot add asafoetida (hing), chopped garlic, ginger and sliced green chili.

Add sliced onions and saute the onions for 1 minute until they turn soft.

Drain the water from soaked dal, add dal in the pan. Let the dal cook along with onion for 2 to 3 minutes.

Add turmeric powder and coriander powder. Give a stir and mix well.

Now add washed methi leaves or fenugreek leaves and stir.

Let the methi gets cooked for 2 minutes until it reduces in size.

Once methi starts shrinking add salt as per taste and sugar. Squeeze 1 tsp of lemon juice.

Mix well and let cook uncovered for 2 minutes.

Methi bhaji is ready to serve with phulkas, chapati or rice.

Nachne Polle – Gluten Free Sweet Red Millet Flour Pancakes Recipe

According to my mum Polle/Pole/Polo in konkani is a sweet or savory pancake made of flour. I really do not know much history about the Goan polle/polo nor could I find any information online. Hopefully on my next trip to Goa I can get more information on less popular Goan recipes that are disappearing. Another on my wish list is “Shollio/sholorio“. I hope I have spelt it right….if not please correct it in the comment section below…Thanks!

The nachne(millet in konkani) pole are almost red-black in color if you use the goan coconut jaggery but if you use the pale brown then it had a reddish-pink color. I do make these pancake often now since my husband and I enjoy them for breakfast and evening tea and it is gluten-free and vegan 🙂  . These pancakes are not fluffy but if you like them to be fluffy you can add about 1/2 tsp of baking powder to the batter. Growing up as a child we had a variations of the pancakes made for evening tea and some more homemade snacks. We ate boiled sweet potatoes, coconut stuffed pancakes called allebelle,  nankhatais, patolios, boiled taro, gorchem, bolo de rulao, bolinhos de coco, xiro, docebaji, plum-cake, atoll.

Serving Size: 12 pancakes

Ingredients:

2 cup red millet/ragi/nachne flour

1 cup grated fresh coconut

3/4  cup grated jaggery

1.5-2 cups water or coconut milk (pancake batter consistency)

1/2 tsp of baking powder (optional if you do not like dense pancakes)

2 pinches of salt

Directions:

Mix the batter together till the jaggery mixes well and dissolves.

Heat a nonstick pan and pour approx 1/4 cup of the batter and let cook about 4 minutes on each side on medium heat.

Enjoy a nice healthy tea snack.

You can make in advance and store it in the refrigerator or the freezer. Just warm them up in the microwave before eating.

Baked Doce de Grao – Gluten Free Coconut Blondie Recipe

I got the idea of testing this recipe after my success with my cheat version of coconut macaroons. Doce de grao (check recipe is a staple sweet made for weddings, Christmas, church feast and litany’s in Goa. This sweet requires a great labor of love. Depending on the quantity it can take an hour, two or more of constant stirring before it is ready to eat. Since it is laborious to make, I only put in the effort to make it during Christmas. Every time I go to Goa I would try to carry it back with me but since fresh grated coconut is used to make this sweet and having it packed would make the coconut go bad in a 27 hour flight. Always feeling disappointed, I truly was so excited to give this recipe a try and hoping it would work. I was so happy when my first batch came out just perfect. I can now make it often and it is gluten-free.

If you are a Goan who has eaten doce de grao then this recipe makes for a softer version of the doce. Doce is a semi-soft dessert but you can also make it harder by adding more sugar. I love my mum’s version which was the semi-soft but it would go bad if not properly stored. Since I usually use less sugar in my deserts I only used 1/3 cup as the sweetened flakes of coconut would add more sweetness. The only alteration to the original recipe is the addition of eggs to bind the doce de grao batter/ coconut blondie(brownie). But it does not alter the taste in any ways. The flavor that is prominent is the chana and cardamom used.

Ingredients:

2 cans or 3 cups of cooked garbanzos beans/ Chana dal

1/3-1/2 cup of sugar

2 eggs

3/4 cup of sweetened flakes coconut

1/2 tsp of ground cardamom powder.

3 tbsp of oil/ghee

Directions:

Heat oven to 350F

In a food processor add all the above ingredients and pulse a couple of times till all is well combined and smooth.

Pour into a well-greased / well lined brownie pan and bake for 25-30 minutes till a toothpick comes out clear.

Cool and enjoy with a nice cup of hot tea.

Orange Cranberry Loaf Recipe

Here is a vibrant colored moist, low-sugar cake/loaf idea for your Easter brunch with a citrus burst. If you want a low sugar version then just skip the orange sugar glaze at the end. Allergic to nuts than skip them and the cake/ loaf will be equally delicious. The flavor is more from the orange. Depending on the type of pan you use the baking time might vary. On my first try I had used a rectangle larger pan the cake baked in 25 minutes but when I used the 9×13 it took about 40 minutes.

I tried this recipe after  my husband wanted me to buy the orange-cranberry scones they sell at the costco.  But the day I went shopping they were not available and so I convinced him that I would make them at home minus the preservatives. The reason being I love cakes more than scones. I also enjoy dessert with nuts in them and on my first try I used walnuts.

Serving Size: 9×13 loaf pan

Ingredients:

Cake batter:

2 cups all-purpose flour

3 tsp of baking powder

1/2 cold cup milk

1/2 cup orange juice

3 eggs

3 tbsp of melted butter

1/4 cup oil

3/4-1 cup sugar

2 tbsp of orange zest

1/3 cup cranberries

1/3 cup almonds/ walnuts/ pistachios

1/8 tsp salt

Sugar Icing:

1 cup powder sugar

1 tbsp of lemon zest

3 -4 tbsp of orange juice

Directions:

Heat oven to 350F

Grease a cake pan with oil.

Beat eggs, sugar,melted butter, oil and salt. Next add the milk, juice and mix it together.

Strain and mix the flour & baking powder together and add it to the wet mixture.

Next add the nuts and cranberry fold it in carefully and then pour  in the pan and bake for 30-45 minutes till the toothpick comes out dry.

Let the cake cool. Then pour in the icing sugar or enjoy it without for a low-sugar dessert.

Chilli Panner (Cheese) Recipe

Being from India it may sound strange when I say, I have never cooked with paneer till recently. But if you are from Goa and grew up Catholic than there is nothing strange about my statement. I have eaten paneer at my friend’s place and in restaurants but since Goan food culture is so different I have never felt the need to cook with it till now. Paneer is very close to a pressed down and shaped ricotta cheese. You can make it at home if you have the patience. Which is on my list to try sometimes soon. Paneer is used in many Indian vegetarian foods like palak paneer, paneer tikka masala, butter paneer, paneer pakora, paneer burji and paneer parathas.

Since it is Lent season for a lot of Catholics around the world as an adult we try to make some sacrifice for the 40 days during lent in remembrance of Jesus’s 40 days of fasting. In our household it is giving up eating meats. I have fallen off the wagon a couple of times already this season, my husband has a stronger self-control than me. I had this recipe at a good friend’s place Kimmy for the first time about 2 years ago and since then she has made it a couple of times more. As my kids enjoyed it a lot I decided to make it. It is a very quick and easy recipe that is lightly sweet and sour. It can be enjoyed as a side dish to eat with rice or bread.

Serving Size: 4-6

Ingredients:

1 block of paneer cut in length

3 multicolored bell-pepper cut in length

1 medium onion cut in length

1″ ginger diced finely

6-8 cloves garlic diced finely

3 tbsp of ketchup

2 tsp of chilli paste or sriracha sauce

1 tbsp of vinegar

2 tbsp of soy sauce

1/8th tsp of sugar

salt to taste

Directions:

In a pan add some little oil and lightly brown the paneer on each side for about 1-2 minutes. Keep aside.

Now add the onions and bell-pepper and saute till they softened. Next add the ginger garlic and saute quickly.

To this add the ketchup, sriracha, vinegar, sugar, soy and salt to taste.

Let simmer for 1 to 2 minutes.

Next add the paneer and mix throughly.

Garnish with sliced fresh spring onions (scallion).

Baked Sev Strips – Gluten Free

Sharing with you the baked version of a popular Indian savory snack recipe that I enjoyed a lot in my college days specially while studying for exams. I was very surprised how close it tasted to the fried version. Sev is a popular Indian snack food consisting of small pieces of crunchy noodles made from chickpea flour paste, which is seasoned with turmeric, cayenne, and ajwain before being deep-fried in oil. These noodles vary in thickness. It is vegan and gluten-free.

You can use this recipe to either fry the strip or use the sev maker to fry or bake the sev. There are variations to this recipe depending on each state in India. I am sharing with you the one that is popular in Goa.

On a side note I do apologize for being slack with my blog the reason being I fell very sick the day after Christmas and am still recovering and to add to it all my husband fell sick last week that ended in him being in the hospital and having various test done to see the cause of his sickness. The next 3 weeks are going to be hectic with doctor’s appointments and I want to focus on him being well. I will be there to support your blog post but will take a break from posting my self. Serving Size ; 4

Ingredients:

1 cup of besan/garbanzo beans flour 

2 tbsp of oil

1/4 tsp of turmeric powder

1/8 tsp of Asafoetida

1/4 tsp of red chili powder

1/2 tsp of baking powder

1/4 tsp of ajwain/ Carom seed powder

1/4 cup water

salt to taste

Directions:

Heat oven to 355F or 180C or heat oil for deep-frying.

Mix all the dry ingredients together well. Knead the flour to a nice dough using little water at a time. Let it rest for 5-10 minutes.

If you have the sev maker, press the dough through the sev maker  to form thin noodles strips and lay it on parchment paper to bake or deep fry the sev.

If you do not have a sev maker then place the ball of dough in-between to parchment papers, roll the dough to a very thin layer. I used a pizza cutter to cut the dough into long strips. You can cut it in cracker shapes as well.

Bake for 13-15 minutes till crisp. Let cool completely and enjoy it as a snack or mix it with roasted nut for extra flavor.

Store in an airtight container for a couple of days.

Smoked Paprika Grilled Chicken

The benefit of running my blog motivates me to experiment in my kitchen and create recipes that sometimes are a hit and some a miss. This recipe is what I put together when I was trying to make the Mc Donald’s Southwestern Chicken salad and wanted to create the same smoky grilled chicken they serve with their salad.

Since then I have used the smoked paprika grilled chicken in salads, tostada’s, quesadillas, lettuce wraps with chipotle dressing and  yesterday I made a chicken sandwich for lunch with lettuce, tomatoes, avocado and a creamy cilantro dressing for my husband. Sharing with you this recipe that is a favorite in my home. I love to marinate the meat overnight and make freezer bags of the marinated chicken for days I want a lighter meal.

Serving Size: 4

Ingredients:

1.5- 2 lbs of chicken breast fillet thinly

1 tbsp of smoked paprika

3/4 tsp of cumin powder

1/2 tsp of onion powder

1 tbsp of garlic powder

2-3 tsp of sriracha sauce based on your spice level

1.5 tsp of lemon/lime juice

salt to taste

Directions:

Wash the meat and dry with paper towel.

Mix the remaining ingredients together and let the meat marinate at-least for 30 minutes. I prefer overnight.

Grill or shallow fry the chicken in a pan for 3-4 minutes on each side till well browned.

Let it rest for a couple of minutes and it is ready to eat.

Thai Curry Glazed Green Beans

Wishing all my dear fellow bloggers and readers in advance a Very Merry Christmas and Prosperous New Years 2016. I know the blogging world is full of baked sweet goods so I wanted to share something different. Sharing one of the recipe I will be having on my dinner table for Christmas. This is a very easy and quick recipe. I made these beans for the first time about 5 weeks back as I had bought more than I needed thai curry paste and pad thai sauce.  Since then, I have made it a couple of times till I got the recipe to my liking. This year I decided to host a Christmas Lunch and as most of my friends are vegetarians my husband wanted me to included this dish. My lunch is going to be a mix of different cuisines just like a typical Goan.

I wanted my beans to have a  subtle taste of lemon grass, some spice and the underlying flavor and sourness of fish sauce. You can replace the fish sauce with soy if you do not like it. You can use the glazed green beans to make a Pad Thai inspired rice noodles, Vietnamese fresh spring rolls – which does not need a dipping sauce, or enjoy with plain rice.

Serving Size: 6-8

Ingredients:

1.5 lbs of tender green beans

Trio of bell-peppers julienne (1 each – red,  yellow, orange)

1 medium onion julienne

1.5-2tbsp thai red/green curry paste

1 tbsp of fish sauce/ soy sauce

4-5 tbsp of pad thai sauce

1/3 crushed unsalted roasted peanuts

Directions:

Cut the green beans into halves and microwave in a glass bowl as per instructions to cook them tender about 6-8 minutes. Drain and keep aside.

In a hot wok add the onions till it becomes translucent.

Next add and saute the bell-peppers for couple of minutes.

Add the thai curry paste and saute for 1-2 minutes till it is fragrant.

Next add the green beans, pad thai sauce, fish/soy sauce and saute till all mixes well and the beans are coated.

Garnish with crushed roasted peanuts and serve with rice, noodles or make some Vietnamese fresh spring rolls.

1 cup of cubed tofu

1/3 cup small dried roasted shrimps

1 cup of cooked chicken

Plum Cake -Goan Black Cake

Frankly speaking Goan Plum Cake has nothing to do with plums. I do not know the history as how it was named but I do know that  it still is a very popular cake in Goa. The almost black cake has a flavor of candied orange rinds, blackened sugar and is dense. It smells and taste very close to the Italian Panettone Bread except it has a cake texture. I enjoy eating this cake for evening tea and it’s on my must have list to bring back from Goa. This recipe has been on my to-do list for a long time. Trying to search for the recipe online was not easy as the search only showed the Famous Goan fruit cake which is made with brandy or rum, dry fruits and nuts. But they were listed as Plum cake. For a Goan born and raised in Goa we sure can tell the difference in recipe.

As it is that time of the year where costco has a lot of panettone bread I bought some, kept eating and reading the ingredients to guess what the recipe would be. It took me a couple of attempts including adding molasses which was not a really good idea before I got the recipe right. Like I said before, for recipes that I do not know I use my memories of that dish, the way it smells, taste and texture. I am so happy to finally almost nail the recipe. Plum cake is an everyday cake usually served when friends and family drop by. It is a non boozy cake unlike the Goan fruit cake which may look close but has a few more ingredients. It is cut in about 9 x 4″ rectangle with the burnt edges trimmed and wrapped in plastic wrap and sold at bakeries and Tea Cafe’s.goan-plum-cake-recipe-collage-of-ingredients

Serving Size: 9 inch loaf pan

Ingredients:

Black Caramel Syrup – Make 30 minutes ahead and let cool

1/2 cup sugar

3 tbsp of water

Cake Batter

1 cup flour

1 tsp of baking powder

1 stick soft butter

2 eggs

1/2- 3/4 cups sugar ( I used only 1/3 cup + 2 tbsp, I prefer less sugar)

1/4 cup raisins

1/4 cup candied orange rinds

1/4 cup tutti-frutti or candied fruit

1/2 tsp of vanilla  (optional)

Directions:

On medium heat in a heavy bottom pan add the 1/2 cup sugar and 1 tbsp of water and heat till the sugar becomes black about 4-6 minutes.

Keep a close eye not to over burn.

Carefully add the remaining water and gently stir till the caramelized sugar turns to syrup.

Take of heat and let cool completely.

Heat oven to 385F.

Grease a loaf pan.

With a hand mixer mix sugar, eggs and softened butter till creamy. Next add the cooled sugar syrup and dried fruits and mix well.

Finally add the flour and baking powder to the batter and mix well.

Pour it in the pan and bake for 26-28 minutes till a toothpick comes out clean.

You can also wrap the cake in saran wrap and refrigerate for 2-3 weeks.

Sticky Chicken 65

I came across a Chicken 65 Recipe online sometime last week. It brought back great memories from my college days. About that time it was just starting to surface on restaurant menu’s and parties and getting to be a popular appetizer. But it is always the first time when you like something that is the impression you remember. I have tried it a couple of times after I came to the US but there was always something amiss. It either was dry, lacked seasoning or sweetness. When I started to search for the recipe I was surprised to find that it was a popular street food in south Indian. My understanding for the longest time was an Indo-Chinese recipe. A cross between tandoori and chicken manchurian.

The fried red chicken pieces is very distinctive of chicken 65. I do not recall ever making this recipe. Mind you, I started my cooking adventures at an early age of 9.  My first recipe being mixed vegetable soup and then experimenting with beef, prawns/shrimp and chicken and other types of soups. For a couple of years my Christmas gifts were cook books. Stuffed tomatoes, meat pies made with Maggie noodle as a base, Indo-Chinese recipes and desserts followed. I was fortunate to have a very supporting family who enjoyed my home cooked foods, specially my dad and brother.

For any recipe that I cannot remember too well I tend to go by my memory of taste, texture and smell. Trying to search for the recipe for Chicken65 I could not find anyone that struck a chord. Going with my gut and the number of recipes I saw online this is my version knowing that I may be called out on the ingredients. The wise-nut that I am, I decide to appropriately name it as Sticky Chicken 65. These deep-fried puppies get tossed in a light sweet and sour gravy. They are served dry or wet but I like them wet. I have also replaced the artificial red food color with natural vegetable color (paprika and turmeric). My recipe also has no eggs and white flour. To soften and keep the meat moist the meat was marinated in plain yogurt.

Serving Size: 4-6

Ingredients:

Marinade

1 lbs of boneless chicken meat diced in 1″ cubes

1/4 tsp pepper powder

1/8 tsp turmeric powder

1/2 tsp of cumin powder

1 tbsp ginger-garlic paste

2 tbsp plain yogurt

1 tbsp of paprika

Salt to taste

Batter:

4 tbsp of cornflour

1 sprig of curry leaves

Sticky Sauce

1/3 cup of diced bell-pepper

1 tbsp of ginger-garlic paste

3-4 tbsp of ketchup

1/4 tsp of cornflour

1/3 cup water

salt to taste

Directions:

Wash the chicken, cut in 1 inch cubes. Apply ginger-garlic paste,pepper,turmeric, paprika, yogurt and salt. Marinate overnight if possible or 1-2 hours least.

Mix the cornflour to coat the pieces of meat. Heat oil in a pan and deep fry the piece for 4-5 minutes till done. Drain on paper towel. Once done quickly fry the curry leaves and toss them with the deep-fried chicken pieces.

You can serve it dry or for a sticky coating follow the below steps.

Next heat another pan, saute the bell-pepper about a minute.

Next add the ginger-garlic paste and saute for 30 seconds.

Then add the ketchup, cornflour, water and saute till the gravy thickens.

Finally toss in the fried chicken pieces and enjoy it hot.

Baked Pumpkin Pudding

My kids and I enjoy pumpkin desserts and since it is raining pumpkins, I decided to jump on board. Ever since my kids have figured that mom can bake, they now think I am a 24/7 bakery. My oldest wanted me to bake a pumpkin pie. But mom always has wise plans, I wanted to skip the pie crust 😉 My first try wasn’t as successful but I think for my taste the second try worked out well. I balanced the pie-crust calories by replacing milk with heavy cream 🙂

This recipe does not have the trilogy of pumpkin spices but just nutmeg. If you love eggnog with its bold flavor of nutmeg then I am sure you will enjoy this pumpkin pudding recipe. My puddings are not overly sweet and I do not use a water bath to bake it.

Serving: 4-6 ramekins or 9″ pie pan

Ingredients:

2 cups pumpkin puree

4 whole eggs

6-8 tbsp of raw sugar

1/2 tsp of freshly grated nutmeg

1/2 cup heavy cream

pinch of salt

Directions:

Heat oven to 350F

Cream sugar, nutmeg, salt and eggs.

Next add the cream. Mix well.

Finally add the pumpkin puree.

Spray your pie pan or ramekins. Pour in the mixture. Place the bake-ware on a cookie sheet and bake for 35-40 minute till a toothpick comes clean.

Let cool and then refrigerate for 1-4 hrs.

Serve with some home-made whipped cream and pumpkin seeds.

Punjabi Chana or Chole Bhature – Garbanzo Beans Curry

I ate my first Punjabi Chole Bhature only after I came to the US as it was a popular dish in most Indian Restaurants. Goan’s make something similar with split green peas and same deep-fried bread called Puri (bhatura).  My husband had been saying he wanted to eat some Chana Batura for a couple of weeks till we had friends visit who said they had just eaten some. Feeling bad for him I decided to make it the next day for Sunday Lunch. I did experiment with the Bhatura(puri/fried bread) using unbleached whole wheat flour. They turned out soft and puffy which surprised me since it was my first attempt at making them from scratch. The flip side, I did not keep a track of the measures. So I will have to share the bhatura (fried bread) recipe at a different time.

It is a perfect vegan recipe. You can also substitute the beans with chicken and make an incredible Chicken Curry. This recipe may get you overwhelmed by the sheer variations in spices but trust me it is worth every bit. My fussy 5-year-old enjoys it every time I make it. You can skip the chili and it still has lots of flavor.

Ps Note: This recipe is prefect for the home cook’s who likes to be in charge of quality control 🙂  I cooked my own beans using a pressure cooker. The reason I did that is because I came across an article that was published recently about cancer causing foods in America. Canned foods and excessive salt were named along with some more foods. If you are a new owner of a pressure cooker then you should add this recipe to your list.

Serving Size: 6-8

Boiling Chana/Garbanzo in a Pressure Cooker

Ingredients:

  • 2 cups dried chana/chickpea/garbanzo beans or 5 cans of low sodium garbanzo beans.
  • 5-6 cups water
  • 1 tbsp of salt

Directions:

Soak the chana/kabuli overnight. Drain the water. In a pressure cooker add the soaked chana, salt and enough water to cover the beans about 5-6 cups of water.

Pressure cook for 6-7 whistle about 35-45 minutes.

Take of heat and let stand till all the steam is released and it is safe to open the cooker.  (Please for your safety follow this step.) 

Whole Spices

  • 2 bay leaf
  • 5 green cardamom
  • 8 whole cloves
  • 8 black peppercorns
  • 2″ cinnamon stick

Wet Paste

  • 1 medium onion
  • 2 tomatoes
  • 5 garlic cloves
  • 1″ ginger
  • 1 green chili (optional)

Powder Spices

  • 1 tbsp of coriander powder
  • 1/2 tsp of dry mango/ amchoor powder
  • 1 tsp of red chili powder
  • 1 tsp of turmeric powder
  • 1 tsp of garam masala powder
  • pinch of asafoedita
  • 1/2 cup water
  • Salt to taste

Directions:

Grind the wet ingredients with no water. Keep aside.

Heat oil in a separate pan. Add whole spices till the oil becomes fragrant.

Next add wet paste and saute till the oil starts to leave the side of the paste. About 10-13 minutes.

To this add the powder spices, saute for 1-2 minutes till it mixes well.

You either can transfer the spice paste to the pressure cooker, add water, season with salt and cook it for 2 more whistle.

OR If using the same pan add the water, salt and chana to the pan and cook for another 20 minutes on medium heat covered.

Easy Oven Baked Barbecue Ribs

Making ribs can either be easy or intimidating and I was latter. All the baking, basting and pasting just seemed too confusing to me 🙂 till I saw a snippet of easy oven baked ribs on Disney Jr when my kids were watching TV. Everyone has a preference of the type of ribs they like. Some like it dry (Memphis Style Ribs), sauced, sweet, savory or spicy. My husband and me enjoy dry savory ribs and my sons like sauced sweet ribs.

                                      Oven Baked Sauced Ribs

Making the dry rub was easy and me the impatient person that I am did not want to bake them at 225F but at 350F. My Goan infused dry spice rub made me very anxious and edgy till the ribs were done and I had my first taste. I added cloves, chile and cinnamon powder which are a common ingredients for most of Goan Meat cooking recipes.

Ribs Dry Rub Recipe

Serving Size: 8 -10 lbs of ribs

Ingredients:

1/4 cup cumin powder

1/4 cup onion powder

1/4 cup garlic powder

2 tbsp or 1/2 cup brown sugar

2 tbsp of ancho or chipotle

2 tbsp of sea salt

1 tbsp of pepper powder

2 tbsp of chili powder or cayenne pepper

1/2 tsp of cloves (optional)

1 tbsp of cinnamon powder (optional)

Direction:

Mix all the powders together and store in an air-tight container.

Researching online I figured 8 steps to follow for making my Easy Oven baked Ribs.

  1. Marinate ribs in liquid smoke overnight or at least 2 hours
  2. Dry with paper towel.
  3. Heat oven to 350F
  4. Apply the dry rub and massage on both sides.
  5. Wrap the ribs in layers of  heavy-duty aluminum foil.
  6. Bake for 2 hrs.
  7. Let it rest for 1 hour
  8. Apply sauce of choice and broil on high for 7 minutes(keep a close eye as it can get easily burnt unattended).

Serving Size: 4-6

Ingredients:

4-5 lbs of spare or short ribs.

1/2 part of above dry rub

6 tbsp of Mesquite liquid smoke

8 cups of water

2 tbsp of sea salt

Directions:

Wash and clean the ribs. Carefully take the sliverskin under the ribs (helps to season the back of the ribs better). In a large bowl soak the ribs overnight or at least 2hrs minimum with liquid smoke, salt and water.

Heat over to 350F

Dry the ribs with a paper towel, rub them with dry spice mix on both sides.

Place them in 3 to 4 heavy-duty aluminium foil wrapper and seal the ribs well.

Place then in the oven and baked for 2hrs till done.

Let the ribs rest for about 1 hour without opening the foil.

Baste it with barbecue sauce of choice( I used the Texas Style Spicy Smoky Mesquite Sauce) and broil it on high about 7-8 minutes so it does not burn.

Oxtail Curry Recipe

I have only eaten oxtail 3 times in the past 10 plus years. That is quite out of whack ratio to say the least. One thing for sure if cooked right  it makes for a fall of the bone recipe. I wanted for a while to make oxtail but since my mum had never made it I was not to sure about the spices to use until 3 weeks ago I made my Goan Jeerem-Meeram dry spice mix to cook my Chicken Meatballs Recipe and a blogger friend asked me about how many ways the Jeerem-Meerem spice mix could be used. That is when my tubelight came on( Indian slang forbrain wave or finally got it“) and  decided to use it to make my Oxtail Curry. Goan’s use this spice mix a lot by tweaking the basic mix for meats and fish. Oxtail is very popular in many countries including the US and Mexico.

Since the oxtail has a lot of fat I wanted to cook in its own fat. For this I just marinated the meat with the spice mix along with fresh ginger, garlic, vinegar, tomatoes and onions before I cooked it in the pressure cooker. Pressure cooker are the “NEW IT” in American kitchens. This recipe can be used for making Oxtail in the crock-pot, slow cooker or dutch oven.

If you are a Goan looking for Ard Mas(Bone Meat) Recipe you can use pork meat and follow the same recipe.

Serving Size: 6-8

Ingredients:

8 lbs of Oxtail

2 tbsp of jeerem meerem spice mix

1.5″ of grated ginger

8 cloves of grated garlic

2 tsp vinegar

1/4 tsp of sugar

3 ripe tomatoes chopped

2 medium onions chopped

1.5 cup water

salt to taste

Directions:

Wash the meat, trim the excess fat.

Apply all the above ingredients and let marinate for 2-4 hrs or more before adding water into the pressure cooker and cooking it for 7 whistles about 45 minutes.

Let cool and the pressure be released before opening the cooker.

Slowly skim off all the visible fat before serving.

Serve with white rice, or soak the mouth-watering gravy with some hot bread. You can add boiled potatoes or serve it with country potatoes on the side.

Time Required for different Cooking Methods of Oxtail:

Crockpot: 2-3 hours by adding  2-3 cups of water

Dutch Oven: 350F for 3-4 Hrs

Slow Cooker: 8 Hrs or overnight on low setting OR 3-4 Hrs on high

Stove Top: 2-3 Hrs covered on medium heat add 2-3 cups water

Goan Sausage Meat Recipe

With my limited experience of trying sausages/chorizo from different countries, I can say in all honesty I haven’t found anything close to a Goan sausage. Maybe the Mexican El Pastor Recipe could have some resemblance. This mouth-watering pork sausage that is sun-dried, smoked and spiced with garlic, ginger, red chillies, spices and vinegar is definitely out of this world. When a Goan catholic leaves home that is one sure food they will always miss. This intense flavored sausage can be used to make many recipes including Sausage Chilli Fry, Chouriço Paochouriço Pulao, Feijoada and Sausage and Potato Curry.

She would be particular that only she would take out the meat from the jar. One thing I do remember my mother’s preserves would last a real long time because she took so much care and was extremely clean in handling them.

chorizo-choriz-sausages-meat-goan-preserve-onilneThis recipe requires time, patience and being careful. To make the Goan sausages, pork is a meat of choice but you can use beef or chicken. Back in Goa “Salt Petre” also know as “Potassium Nitrate” is used as a meat preserve. I have skipped using Salt Petre after reading about its different uses in US and am not comfortable using it in foods.

Goan Sausage Meat Recipe

Serving Size: 3 lbs of preserved sausage meat

Ingredients

3 lbs of pork meat with fat (1:2 fat to meat ratio) cut in 1/2″ cubes

1.5-2 pods of garlic crushed

2 packets of Goan Choriz Sausage Meat Masala

1/2 tsp of sugar

2 tbsp of salt

2 tbsp of vinegar

Wash the cut meat and dry it well with a paper towel. Apply salt, vinegar and put weight on the meat. Check every couple of hours and drain the water out. Let the meat stand for at-least 24 hours.

Drain out any more liquid that is released. Wipe the meat again with dry paper towel. Apply the sausage masala paste, crushed garlic, sugar and keep in the sun covered with a mess. Stir the meat couple every couple of hours. Drain out any liquid. Repeat for 1 or 2 days. The meat will look dry. Transfer to a glass jar with a glass lid or plastic. Avoid any metal lids as they will rust due to vinegar. Store in a cool dry place for couple of months. Use only dry wooden or plastic spoon.

You can stuff the meat in natural casing and dry it again in the sun for a day and smoke it under indirect fire wood heat.

Ingredients:

1 lbs of sausage meat

2 medium onions sliced vertically

Directions:

In a hot skillet add the chopped onion and sausage meat and saute on medium heat for 10-15 minutes till the meat is cooked and the onions soften.

Canned Sardines Salad

As it is rainy season in Goa, I remembered my mom’s canned sardines recipe called Sardinhas a Portuguesa (Sardinhas em Molho de Tomate) that she would make. Growing up we ate fish that was seasonal as we had no other options. Goan’s did not import foods as they do now a days. Our exposure to other cuisines was very limited. It was only when friends and family visited from outside Goa or India we got  a chance to taste other foods.

canned-sardines-goan-recipe-fish-salad-sardinhas-portuguesaUsually in July-August sardines were available and at least once’s a year my mom cooked her Sardinhas (Portuguese). She would also make sautéed sardines with tangy and sweet recheado masala, curry and crispy fried sardines coated either with rava(cream of wheat ) or rice flour, salt and turmeric. This recipe is also made in Goa with Fire Roasted Sundried Salted Mackerels (“Karem” in Konkani).

My kids enjoy it with tortilla chips and I like it as a side with my rice and fish curry or Goan Pulao. As kids we called it “Mama Arroz” as it was cooked by my mom on Sundays which was her day off.

Ingredients:

1 large can of sardines in tomato sauce

1 medium onion diced

2 tomatoes diced

1 jalapeno chopped finely (optional)

10 springs of fresh cilantro chopped

3 tbsp of vinegar

Salt to season

Drain the fish out of the sauce. Add all the chopped ingredients along with vinegar and salt in a bowl and mix well.

Finally crumble the fish and add to the mixture. Mix gently as not to break it up too much. Chill in the refrigerator till ready to serve.

Enjoy it as a side along with rice or as a canned fish salsa with tortilla chips which my kids enjoy.

I have topped it on a Triscuit. We also made sandwiches with the sardine paste.

Marble Cake

Marble Cake is very much part of the Goan culture. In-fact in the 80’s stores would mostly sell 4 types of cakes in Goa Pound, Plum, Marble and Rainbow cake. During Christmas we would get Walnut and Fruit Cake. The batter was a basic pound/sponge cake with different twist. In mid 90’s coffee and pastry shops were getting popular and these cakes started to lose their charm to newer pastries.

Tea time after siesta is very much the “Susegado(peaceful)” Goan lifestyle that is slowly dying. Family or friends usually drop by to visit between 10-12pm or 3-6pm and that is when either tea or soda will be served along with snacks.

If you skip the cocoa powder than you can use the same batter to make the famous Victoria Sponge Cake Recipe. A very easy to make basic moist sponge cake.

Serving size: 6-8

Ingredients:

1 cup of all-purpose flour

3/4 cup sugar

1/2 cup milk

2 eggs

1 tsp of vanilla essence

1 (1/4 lbs) stick of room temperature butter

1.5 tsp of baking powder

2 tbsp of cocoa powder

Heat the oven to 400F.

Grease and flour a bread loaf pan.

In a mixing bowl, mix together butter, sugar, eggs, vanilla essence, baking soda till all the mixture is smooth.

Next add the milk and mix well.

Add the sieved flour slowly and keep mixing with your hand mixer till smooth.

Divide the batter into 3 equal portions and add the cocoa powder to one portion.

Pour in the vanilla batter first then slowly add the chocolate and top it again with the vanilla batter. Use a knife and swirl it around through the batter.

Bake for 20-30 minutes. Till a toothpick comes out clean.

Let cool in the pan for 10 minutes take it out and then cool it on a cooling rack.

Potato Chops

Goan Mince Meat Potato Chops is a soft delicate potato pattie stuffed with seasoned cooked beef. It is very similar to the Cuban Papas Rellenas with a couple of twists. Goan’s cook the meat stuffing without peas and carrots, they use cream of wheat instead of bread crumbs as coating and shallow fry the disk shape pattie instead of deep-frying the potato balls. I know it seems quite far apart but when you take a bite it taste very close to the potato chops.

potato-chops-mince-ground-beef-vegetarian-recipe-goanThere are many variations I have seen online. Some use a little flour mixed with the potato mash, an egg wash, bread crumb and corn starch. You can make it vegetarian by using cooked peas and carrots in garam masala with some onions and fresh cilantro/ coriander then mixed with the mashed potato and shallow fried. You can replace the beef with cooked ground chicken or turkey. At times my mom would use leftover beef roast. She would put small pieces through the meat grinder then saute it with some onions, green chili / jalapeno. Other times if meat was too less she would mix it with the potato mash. You want to skip tomato for this recipe as the meat needs to be dry to be stuffed.

Ingredients:

Stuffing: Mince Meat

1 lbs of lean ground beef

2 tbsp of fresh ginger garlic paste

1 tsp of vinegar

1 medium onion chopped

1 jalapeno chopped (optional)

1-2 tbsp of xacuti masala

1/3 cup water

salt to taste

Heat oil in a pot, saute the onions till translucent. Add ginger-garlic paste and saute.

Add the xacuti masala, vinegar and saute for 1-2 minutes.

Next add the ground beef and mix it well with all the spices add water and salt to taste and cook covered for 15-20 minutes on medium heat. Uncover and cook for another 5-10 minutes till all the water dries.

Let the meat cool.

Potato Mash and Coating for Shallow Frying:

4 large russet potatoes

2 cups cream of wheat

salt to taste

oil for shallow frying

Wash and boil the potatoes on medium heat till you can stick a knife  through, about 20-25 minutes. Take it out of the pot and let cool. Take off the skin and mash the potatoes, season with a little salt.

Divide in equal portions about the size of a golf ball. Flatten with your hand each ball and then stuff the center with cooked ground beef. Gather at the center the mashed potato to cover the meat and shape it into approx 1/2″ thick disk or hockey puck.

Cover in cream of wheat and shallow fry each side for about 1.5 to 2 minutes on each side till it has a nice golden brown crust.

Beef Cutlets Recipe

The Goan Beef Cutlet Recipe is a spiced version of a German Schnitzel and Chicken Fried Steak and the coating is cream of wheat/ semolina/rava. I love these cutlets. We used to make sandwiches with the leftovers as a quick snack. Beef, fish and pork is consumed a lot in a christian household in Goa. Every time I think of a new recipe for my blog it always has to do something with beef 🙂 .

A pattie made with ground beef is called as Almôndegas for a Goan cutlet only sliced beef that is tenderized is used. I used  Chuck Steak to make this recipe but I wouldn’t recommend as it was way too chewy. Sharing my families recipe with you.

Ingredients:

2 lbs of sliced beef about 3-4″ round and 1/4″thick

3 tbsp of vinegar

1″ of  fresh ginger

1-2 jalapeno

10-12 garlic cloves

12 whole cloves

10 whole pepper cloves

2 cups of cream of wheat/rava/semolina

Salt to taste

Wash and wipe dry the meat. Grind garlic, ginger, jalapeno, cloves, peppercorns and vinegar to a fine paste.

Apply salt and the ground marinade to the cut meat. Let marinate for 1 to 2 hours in the refrigerator.

Heat oil in a shallow pan. Coat each slice with cream of wheat and shallow fry till light golden brown.

Serve as a side or enjoy with Oil-Free Sautéed Green Beans like I did.

Ingredients:

2 lbs of fresh-cut green beans

1 medium onion diced

1 chopped tomato

1 diced jalapeno

4 cloves of garlic chopped

1/2 tsp of cumin seeds

1/4 tsp of turmeric

1/2 chicken or veg bouillon

1 cup water

1/2 cup of fresh grated coconut (optional)

salt to taste

In a pot add all the above ingredients together. Mix well, cover and cook for 25-30 minutes till the beans are soft. Check and stir in between. If adding grated coconut add in the last 5 minutes. Mix well and enjoy as a nice tasty  healthy side.

Mangalorean Buns – Fried Banana Bread

If you love Banana bread then you have to give Mangalore Banana Buns (Bhubhus Roti / Puri) a try. This sweet chewy deep-fried banana bread made with baking soda and cumin seeds is a bomb. The texture is very similar to a whole wheat pita bread and is also very similar to American Indian Fry Bread. Last week I stumbled upon this recipe while browsing online and was very excited to give it a try. I also found out for the first time that  it was a Mangalorean (Mangalore) and not a Goan sweet. Goan’s have something similar which is a ball-shaped called filoz.

mangalorean-mangalore-buns-pao-puri-goan-banana-fried-breadMangalore and Goa share some similar cuisines. This sweet bun (pao/puri/bread) was a common sight at most Goan Tea Stalls. It reminded me of the good old days when we were kids. When I went on my first visit back to Goa from the US, it was on my “Must Eat” list. Now a days it is hard to find in Goa with local tea stalls being replaced by the fancy pastry places.

To keep the dough chewy and soft I found that combining white with whole wheat flour is the best. The moisture in the banana and yogurt is enough to make the bread dough. Plus letting the dough to rest overnight in the refrigerator will give the best results. As I was making the buns for the first time I was worried if I would get the caramelized color on the bread and I was happy it did come out just the way I remember.

Ingredients:

3/4 cup all-purpose flour

1/2 cup of whole wheat flour

1 over ripe banana

1/2 tsp of whole cumin

1/2 tsp of baking soda

3 tbsp of sugar

3 tbsp of plain yogurt

salt to taste

Mash or either puree the ripe banana. Put it in a mixing bowl. Add the sugar, salt, cumin, sugar, yogurt and baking soda and mix it well.

Next add the flour in slowly till a slight wet dough is formed similar to a bread or chapati dough texture.

Let it rest overnight. It will have a brown hue. Divide the dough into equal portions.

Heat oil in a deep pan for deep-frying.

Shape into small disk, dust with flour so it does not stick and roll it about 1/8″ thick and 3-4″ round.

Slip each disk carefully into the hot oil and gently caress the top of the bread to let it puff up. Flip and fry till brown.

Drain it on a paper towel.
